Food Production Specialist


Salisbury University, a member of the University System of Maryland, is a regionally accredited four-year comprehensive institution offering 62 distinct graduate and undergraduate programs. Located on the historic Eastern Shore, SU's beautiful campus is some 30 miles from the Atlantic beaches and 2.5 hours from Baltimore and Washington, D.C.

Salisbury University is seeking qualified applicants for the position of Food Production Specialist.

Primary Job Duties: Builds, audits and maintains the recipe, ingredient and order guide databases of the automated food production system. Maintains production and cycle menu records. Collaborates with the Executive Chef and Chef Manager to determine production quantities and purchases of food, beverage & supplies based on anticipated guest counts and menus within budgeted costs. Collaborates with the Chef Manager to plan, direct and coordinate the activities of dining hall production staff in order to prepare and deliver consistency of quality food for campus consumption. Utilizing the system; costs out proposed recipes and menus to ensure all meet target metrics established for cost per meal at the dining hall.

Minimum Qualifications: Bachelor's Degree with a minimum of two years' experience in related work. Associate's degree with additional work experience will also be considered. Proficiency in Microsoft Office Suite required.

Elementary knowledge of reference and research methods and techniques used in collecting, compiling, and organizing data and information; of basic methods and techniques used in organizing and conducting studies and analyses or programs, procedures, and organizations; of basic analytical and statistical principles and techniques. Skill in the use of office automation software and its application; in operating manual and automated office equipment. Ability to establish and maintain effective working relationships; to present ideas and information clearly and concisely both orally and in writing; to perform mathematical computations; to present statistical material in chart and graph form. Thorough knowledge and understanding of the principles and methods in large scale food preparation and service. Thorough knowledge of and skill in the application of procedures and standards of quality and quantity food selection, food preservation, food preparation, meal service, and portion control. Thorough knowledge of and skill in the use of food service equipment and materials. General knowledge of federal, state, and local health and sanitation regulations applicable to food service activities. Skill in providing guidance to food service personnel. Ability to organize and coordinate the work of food service operations and to control workload to assure quality service; to prepare and maintain records and reports; to communicate effectively both orally and in writing.

Preferred Qualifications: Degree in business or culinary arts preferred.

This is a full-time, non-exempt, State position with a full benefits package. Starting salary is $38,204 annually, which is approximately $18.32 per hour. This position is considered essential and will be called upon to provide emergency coverage when necessary.
