Area Manager in Retail Operations (UCP 7), Dining Services


The Department of Dining Services at the University of Connecticut is seeking an Area Manager in Retail Operations. This position is a state, salaried, full-time position employed by the University of Connecticut's Department of Dining Services, Storrs campus. This position reports to the Assistant Director of Retail Operations or the appropriate designee, oversees, and participates in all aspects of the daily operation of Chuck & Augie's, an upscale 100 seat-dining restaurant and Dairy Bar Too, located in the Student Union.

Duties and Responsibilities

This position is responsible for maintaining an efficient and effective food service operation, while ensuring safe and sanitary conditions in accordance with applicable standards, policies, laws, and regulations. Maintains a high level of visibility in the dining room during busy times to ensure the smooth operation of the facility and to promote good communication with the customers. Responsible for the hiring, training, scheduling and evaluating of all employees working in the restaurant. Determines necessary staffing levels and other personnel matters in accordance with applicable policies, procedures, budget, and labor contracts; implements approved plans. Responsible for maintaining quality, service standards and profitability of Chuck and Augie's Restaurant, the Dairy Bar Too and any other operations assigned. Tests new products and menu items, under the guidance of the Assistant Director for Culinary Development, making changes periodically to ensure an updated menu and reflect customer needs and desires while maintaining proper cost ratios. Contributes to menu planning based on knowledge of proper nutrition and customer preference including the provision for gluten free diets, low salt and/or healthy options and the usage of local products. Provides nutrition information to customers. The knowledge of retail costing, item pricing and menu sales mix costing/pricing is essential. Ensures that food is prepared correctly and presented in an appealing fashion. Works with the Assistant Director of Retail to ensure that menus are properly costed out for both customer value and profitability. Supervises the ordering of food, supplies and liquor for the restaurant. Responsible for monitoring the budget and analysis of the P & L statements. Develops and maintains advertising and promotional activities to maintain a high volume of business. Responsible for adhering, without exception, to all policies and laws governing the sale and service of alcohol. Responsible for maintaining an adequate inventory of food and supplies and for safe and sanitary storage of these items. Maintains an adequate inventory of small wares as needed to operate both the restaurant and catering aspects of the operations with efficiency. Maintains the highest standards of sanitation and cleanliness in the facility. Ensures the facility is kept in excellent repair. Attends meetings as required; works within all University and departmental guidelines and performs other duties as required.

Minimum Requirements

Bachelor degree or equivalent combination of education and related work experience. One to three years relevant experience. Strong interpersonal skills along with demonstrated experience working with student groups. Demonstrated time management skills; verifiable culinary and customer service skills. Knowledge of basic accounting principles; working knowledge of all Microsoft program and ServSafe certified or its equivalent.

Preferred Qualifications

TIPS training for alcohol service and knowledge of FoodPro menu management system and Diebold access control system. Experience in college or university retail food service operations and experience in supervising a unionized staff.

Appointment Terms

The salary is commensurate with experience and qualifications. Target salary is $55,471 annually. Comprehensive benefit package which includes medical and dental insurance.
